We are a farmstead
cheese dairy - we hand make cheese in very small batches with the milk from our
goats only. Our cheeses are made with
raw milk (not pasteurized) and aged 60 days minimum. Our production is seasonal (8 - 9 months a year).
The goats are pastured year round, and receive
During its 2-3 months of aging,
the natural mold on the cheese rind is allowed (and encouraged!) to grow, providing
a beautiful rock-like pattern with colors ranging from light to dark grey, with
some browns and occasional light reddish and yellowish tones.
This is a small wheel of cheese with a beautiful reddish color. The edible rind is washed twice a week with fresh whey while the cheese ages, giving it its unique aroma and flavors. After 2 months the cheese becomes soft and somewhat runny with a slightly chalky center lending a pleasurable mixture of textures. The cheese bursts into flavors of clean milk and nuts with woodsy and buttery undertones. size of cheese = 10-12 ounces
During its 2 month aging, we alternatively wash (with whey and brine) and brush the rind, giving the cheese a natural burnt gold color which, as the name of the cheese indicates, reminds us of our county’s Gold Rush history. The rind is edible and mild, the texture is semi-firm, and the flavors are nutty, herbal and lingering …size of cheese = 3.5 - 4 lbs
